How does looking outward always seem to turn our thoughts inward?  So strange, but true.  Yesterday, I went to the cliffs at Torrey Pines, where all the hangliders and paragliders jump off, and all I could think about was the simple things in life.  Stripping my life down to the basic necessities again.  Giving everything back to God, and letting go of all my anxieties and worries.  My heart couldn't help but sing this song as I looked out to the enormous ocean from the cliffs: "All I Need is You."

I've had pretty bad anxiety lately and have struggled to keep my trust in God.  I just always think back to the picture that he's always there waiting to just hold me.  All I have to do is ask him to.  I don't know why it seems easier just to take everything into my own hands, but I always seem to choose that route.  That is, until I fail miserably and realize that I can't do anything without Him.  That's when all I can do is just pray, "all I need is You."

The shark hat returns! My friends and I found the best seat in the stadium at the Padres game- a little mexican restaurant/bar in the corner that overlooks the field. Oh, the great American past time!

Happy Bites.

So, it's no secret that I struggle with keeping my energy up (especially without my daily cuppa cappucino), but these little energy bites make me happy and wake me up! They were the easiest thing I have made in a long time, and since I have had literally zero time to bake anything, I was super-happy I found my new go-to recipe.  These are great little snacks during the day, dessert, or the perfect midnight snack.  My little secret: try freezing them!

No-Bake Energy Bites Recipe

Ingredients:
  • 1 cup oats
  • 2/3 cup toasted coconut flakes
  • 1/2 cup peanut butter
  • 1/2 cup ground flaxseed (I used Trader Joe's Pumpkin Flax Granola)
  • 1/2 cup chocolate chips (optional)
  • 1/3 cup honey
  • 1 tsp. vanilla
Method:
Stir all ingredients together in a medium bowl until thoroughly mixed.  Let chill in the refrigerator for half an hour.  Once chilled, roll into balls of whatever size you would like.  (Mine were about 1″ in diameter.)  Store in an airtight container and keep refrigerated for up to 1 week.
Makes about 20-25 balls. {via gimme some oven}

Sunset on the Cove.

We decided to be each other for a night.
We caught the most gorgeous sunset when we arrived to George's on the Cove.
I didn't think San Diego could get any better, but it did!
A & I had the most magical week exploring San Diego.  What better way to end the perfect week then sunset at George's on the Cove? Definately a must-go-to while in San Diego.

Ocean Beach.

As you probably know, I lived & worked at the OBH (Ocean Beach Hotel) in Perth, Australia for the last 6 months of my trip.  I was just wandering along Ocean Beach in San Diego yesterday, and I came across the OBH here.  As I watched the surfers beneath the pier, I reminisced about how far I have come emotionally and spiritually since I left Australia in January.  At the OBH I lost myself in friends, boys, parties, and my life as a bartender.  Here, I have found myself in deep friendships, a new career, exploring a new city, and my new amazing life as a follower of Christ.  It is so crazy to me how much more fulfilled I am, here. It's not that this place is any better but that my perspective has changed.  Although San Diego is no Australia and never will be, I will be forever grateful for the void I have filled while I have been here.  One of my best friends from home, A, is coming out to visit in just a few weeks and I can't wait to show her this amazing place!  I bought us SUP (Stand Up Paddle-board) lessons.  I can't wait to cruise the beautiful ocean again.  The weather has improved to be perfectly warm, but not too hot.  I'm starting to really appreciate the constant sea-breeze while the rest of the country is suffering in the heat.  Maybe I can even convince A to move here from Georgia!
